Chicken is great for dinner, there’s so much you can do with it, without having to be a trained chef for it to come out good. Not to mention it’s also one of the cheapest meats to buy in the supermarket. Other perks include the great source of protein, low in carbs and calories, and being very quick to make from the fridge to the dinner plate. Make sure you know these 26 healthy chicken recipes for when you need a reliable meal in a pinch.

1. Chicken with Mushroom Cream Sauce

Ingredients:Chicken-with-Mushroom

  • 2 5-ounce boneless, skinless chicken breasts, trimmed and tenders removed (see Tip)
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon salt
  • 1 tablespoon canola oil
  • 1 medium shallot, minced
  • 1 cup thinly sliced shiitake mushroom caps
  • 2 tablespoons dry vermouth, or dry white wine
  • 1/4 cup reduced-sodium chicken broth
  • 2 tablespoons heavy cream
  • 2 tablespoons minced fresh chives, or scallion greens

How to make it:

1. Season chicken with pepper and salt on both sides.

2. Heat oil in a medium skillet over medium heat.

3. Add the chicken and cook, turning once or twice and adjusting the heat to prevent burning, until brown and an instant-read thermometer inserted into the thickest part registers 165°F, 12 to 16 minutes. T

4. Transfer to a plate and tent with foil to keep warm.

5. Add shallot to the pan and cook, stirring, until fragrant, about 30 seconds. Add mushrooms; cook, stirring occasionally, until tender, about 2 minutes. Pour in vermouth (or wine); simmer until almost evaporated, scraping up any browned bits, about 1 minute. Pour in broth and cook until reduced by half, 1 to 2 minutes.

6. Stir in cream and chives (or scallions); return to a simmer. Return the chicken to the pan, turn to coat with sauce and cook until heated through, about 1 minute.

2. Chicken Cacciatore

Ingredients:

  • 1/4 cup all-purpose flourChicken-Cacciatore
  • 2 8-ounce boneless, skinless chicken breasts
  • 1/4 teaspoon salt, divided
  • 1/4 teaspoon freshly ground pepper
  • 2 tablespoons extra-virgin olive oil, divided
  • 8 ounces mushrooms, quartered
  • 1 small onion, sliced
  • 2 teaspoons chopped fresh rosemary or 3/4 teaspoon dried, plus more for garnish
  • 1/2 cup dry white wine
  • 1 14-ounce can no-salt-added diced tomatoes, drained
  • 1 cup reduced-sodium chicken broth
  • 3/4 cup sliced jarred roasted red peppers, rinsed
  • 1/4 cup quartered Kalamata olives

How to make it:

1. Place flour in a shallow bowl. Cut each chicken breast in half on the diagonal to make 4 roughly equal portions; sprinkle with 1/8 teaspoon salt and pepper.

2. Dredge the chicken in the flour and transfer to a plate. Reserve 2 tablespoons of the flour.

3. Heat 1 tablespoon oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides, about 2 minutes per side. Transfer to a plate.

4. Add the remaining 1 tablespoon oil to the pan. Add mushrooms, onion, rosemary and the remaining 1/8 teaspoon salt and cook, stirring frequently, until the onion is soft and golden brown, about 5 minutes.

5. Sprinkle the vegetables with the reserved flour and cook, stirring, until coated. Add wine to the pan and cook, stirring, for 1 minute.

6. Add drained tomatoes, broth, roasted red peppers and olives; bring to a lively simmer over medium-low heat.

7. Return the chicken to the pan and continue cooking, stirring once or twice, until the liquid has thickened slightly and the chicken is cooked through, about 10 minutes.

8. Serve the chicken with the sauce, garnished with rosemary, if desired.

3. Chicken Parmesan

Ingredients:Chicken-Parmesan

  • 2 8-ounce boneless, skinless chicken breasts, trimmed
  • 1/2 teaspoon freshly ground pepper, divided
  • 1/2 cup coarse dry breadcrumbs, preferably whole-wheat (see Tip)
  • 2 tablespoons freshly grated Parmesan cheese
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 28-ounce can no-salt-added crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1 cup shredded part-skim mozzarella cheese
  • 1/4 cup chopped fresh basil or parsley

How to make it:

1. Cut each chicken breast in half on the diagonal to make 4 roughly equal portions. Place between pieces of plastic wrap and pound with the smooth side of a meat mallet or a heavy saucepan to an even 1/4-inch thickness.

2. Sprinkle the chicken with 1/4 teaspoon pepper. Combine breadcrumbs, Parmesan and 1 tablespoon oil in a small bowl; set aside.

3. Position rack in upper third of oven; preheat broiler to high.

4. Heat 1 tablespoon oil in a large, ovenproof skillet over medium-high heat. Add half the chicken and cook until golden, 2 to 3 minutes per side.

5. Transfer to a plate. Reduce the heat to medium and repeat with the remaining 1 tablespoon oil and chicken. Transfer the chicken to the plate.

6. Add onion and garlic to the pan and cook, stirring, until beginning to soften, 2 to 3 minutes. Remove the pan from the heat. Pour in crushed tomatoes; add Italian seasoning, salt and the remaining 1/4 teaspoon pepper.

7. Return the pan to medium heat and cook, stirring, until the onions are tender, 2 to 3 minutes. Return the chicken and any accumulated juices to the pan. Turn to coat with the sauce.

8. Sprinkle about 1/4 cup of mozzarella cheese over each piece of chicken, then top with the reserved breadcrumb mixture. Broil until the cheese is melted, about 1 minute. (Watch carefully to prevent burning.)

9. Serve the chicken with the sauce, sprinkled with basil (or parsley).
